Shrimp and Quinoa Stuffed Peppers 

1 1/2 cooked quinoa

1 medium orange pepper chopped

1/2 large red onion

7 cloves of garlic chopped

1 1/2 pounds shrimp

save shells for shrimp stock

fresh cilantro

1/4 cup bread crumbs (can omit)
1 1/2 tablespoon flour

1 oz lemon juice

1/2 cup white wine or rose (sparkling)

chipotle powder

smoked paprika 

cumin

oregano

salt pepper

garlic powder

shaved parmesan 

asparagus with olive oil, salt and pepper. 

Finish with lemon zest and shredded parm
